We work with small and medium-sized businesses from Vienna and all over Austria. One of them is Michael: he supplies us with strawberries and nothing else – different varieties with different levels of acidity.

In a vaulted cellar in Vienna, Martin and Otto Kammerlander grow organic mushrooms. The range follows the temperature in the cellar and runs from shiitake to pom-pom.

Sustainability

How we run the house, day by day.

We buy mostly in Austria and as close to home as possible. Our kitchen follows the season consistently and uses each product as fully as it can.

Much is made right here: bread, pickled vegetables, syrups and lemonades. Beyond the kitchen we avoid and separate waste, use biodegradable cleaning products, certified paper and eco-friendly packaging. Our electricity comes 100 % from renewable sources.

The team, too, works by clear principles: speak openly, listen, take responsibility.
