Operating sustainably and paying close attention — to where something comes from and how it’s made — has been our credo from the very beginning.
For us, this means taking responsibility: for what we buy, prepare, and serve.
Our ingredients come from Austria — as locally as possible, with short transport routes and from honest hands. From people who produce with just as much passion as we cook. We choose products that are created in harmony with nature and cook only what’s in season.
Much of what we serve is made right here at the Labstelle: bread, pickled vegetables, syrups, and lemonades — all handcrafted with time, dedication, and a good dose of joy.
But for us, sustainability doesn’t end with food. It runs through everything we do. We avoid waste, separate and dispose of it responsibly, use biodegradable cleaning products, certified paper, and eco-friendly packaging. And our electricity comes 100% from renewable energy sources.
Yet perhaps the most important part of our sustainability philosophy is how we treat one another.
Respect, openness, and trust aren’t just guiding principles — they’re part of our everyday life. Everyone is encouraged to speak up and be heard. Because true sustainability begins with people — and with the feeling that, together, we’re doing something meaningful.
All of this, to us, is what sustainability means.
